It is perfect as base for steamboat, noodles, porridge and even pasta soup. My kids love having chicken macaronic soup for breakfast that takes only 15 minutes to prepare with this broth.
It contains many important nutrients which are perfect for growing children. It is known to be beneficial for gut health and is a low calorie and carb option.
Where to get chicken bones or carcass?
Most butchery and grocery stores carry chicken bones or carcass in the frozen or fresh section. I get mine online from Shopee in Singapore. Other popular local online chicken butchers as Master Grocer, Kee Song also have them.
In the local fresh market, you can ask for “ji(1) gu (3)” (aka chicken bones) from the butcher.
How to make quick chicken bone broth?
You can boil the broth on medium to high heat for 30 minutes to speed up the cooking process.
The broth will be ready to use but I recommend simmering for 1.5h to extract the full flavour and benefits of the bone broth.
What not to put in bone broth?
It is best to remove chicken fat and skin from the carcass and bones to make a clear and light (but very flavourful broth). Excess fat from chicken can result in a very oily broth that affects the mouthfeel.
To make a clear and light broth. Avoid using starchy vegetables such as potatoes or sweet potatoes.
How to store chicken bone broth?
Keep it in the fridge for up to 3 days and freeze it for up to a month.
Recipes with chicken broth
Steamboat Soup Base
Make 2 services of chicken bone broth as a steamboat or hot pot soup base. Add vegetables such as shiitake mushrooms, leek and radish.
Asian Chicken Porridge
Boil 1/2 cup of Thai fragrant rice with 1L of chicken bone broth on low for 30 – 45min. Stir frequently to prevent burning.
Add sliced chicken thigh marinated with light soy sauce and pepper to porridge to cook or top with cooked shredded chicken.
Easy Chicken Macaroni Soup

Easy Chicken Bone Broth
Ingredients
- 1 whole carrot 1 inch pieces
- 1 whole onion 1 inch pieces
- 2 chicken carcass
- 2 l water for brining
- 2.5 l water for broth
- 4 tsp sea salt
Instructions
- Clean chicken carcass thoroughly to remove chicken organs. Cut off fats and skin with a sharp kitchen scissors.
- Brine chicken carcass for at least 30 min by soaking in water and 2 tsp of sea seal.
- Drain chicken carcass and rinse thoroughly to remove any impurities.
- Add water for broth into a large pot and bring to a boil.
- Add in carrots, onions, salt and chicken carcass.
- Boil on medium heat for 30 minutes.
- Then, simmer for 1.5 hours.
Notes
- You can add other chicken bones if you have them available.
- Feel free to use other root vegetables such as celery, shallots.
- To boost immunity, add sliced ginger and couple cloves of garlic.
