Spinach Egg Drop Soup

Ingredients

  • 1 packet spinach, sharp or round life ($1.50)
  • 2 l stock (homemade or with cubes) ($4.00)
  • 2 eggs, beaten ($0.44)
  • 3 tbsp wolfberries ($0.91)
  • salt
  • soya sauce
  • pepper

Instructions

Preparation

  • Remove roots of spinach and rinse thoroughly with water to remove any soil or sand. Cut spinach into shorter lengths.
  • Beat eggs.
  • Rinse wolfberries with water.

Cooking

  • Bring ikan bilis soup stock to a rolling boil.
  • Add wolfberries.
  • Add spinach and bring to a boil. Cook until spinach is almost tender.
  • Season with salt, pepper and soya sauce to taste.
  • Lower to a slow simmer. Stir soup while pouring in beaten egg slowly.

Notes

Tips: 
  • Use a measuring cup with a spout to pour egg in a fine stream. 
  • Add sliced chicken thigh, fish, prawns, silken tofu or minced pork for added protein. 
  • Serve and enjoy with rice.
